Honeydew-Lime Popsicles

Now that we're counting down the weeks in single digits (wow!), Otto has grown to be the size of a honeydew.  I was afraid I wouldn't be able to find an interesting dish to make out of honeydew, but fortunately I stumbled onto this one: honeydew-lime popsicles.  I had to run out and buy some popsicle molds, but I didn't mind (they were cheap, and I'm sure I'll use them to make homemade popsicles with Otto when he/she is older).


I found them to be a little too lime-y, but MJ thought they were good.  Then again, he's a big fan of lime-flavored things, so that's no big surprise!

I will definitely not be making these again, however.  They were way too much work for such a simple result!  If you have never pressed the entire puree of a melon manually through a sieve to get the juice ... well, trust me; it makes a mess and takes a lot of effort.

Otto weighs about 3 pounds now, and will gain about a half pound each week from now on.  When he's awake inside me, his eyes are open and he's checking out his surroundings.  Most importantly, this week his brain starts to develop all the wrinkles and folds necessary for proper development.
