Roasted Cauliflower Puree

Little Otto is getting bigger and bigger!  He's up to the size of a head of cauliflower now.  I decided to make Roasted Cauliflower Puree as a side dish with dinner last night.  Except it turned out more like Roasted Cauliflower Soup.  I'm not sure what happened -- I followed the recipe perfectly (except I halved everything). 


Thankfully it was tasty, so we still enjoyed it.  But I wish it would have turned out the same consistency as, say, mashed potatoes.

He weighs a little more than 2 pounds now, and his eyes can open and close.  His lungs are finally capable of breathing air, so if he was born at this point he would have an 85% chance of survival.  That's such a relief!  Now he's entering a stage of rapid brain development, so I'll be sure to keep taking my fish oil supplements.

Very exciting and reassuring! Upon first glance, I thought you just had white bowls with breadcrumbs--lol!! Then I looked closer and saw the "soup". Too funny! :)
