Pineapple Upside-Down Cake

One of my memories of my paternal grandmother is that she often served pineapple upside-down cake for dessert when we visited her.  I had never had this kind of cake before, and as a child I thought it was fantastic.  And honestly, I don't think I've had it since then.

So when I read that Otto is the size of a pineapple this week, I decided to make this cake.  I don't have my grandmother's recipe, so I found a Paula Deen version online that was highly rated.  It was definitely yummy, but it didn't taste as good as I remember my grandmother's cake tasting.  But I will still enjoy eating it over the next few days!

Otto weighs at least 4 pounds now, and is starting to fatten up.  He is practicing breathing, even though he won't actually breathe until he's born.  His skin is lightening from red to the nice, healthy pink color he will have when he's born.  But the biggest news is that his lungs are almost completely developed!
